How to apple jelly. This is by far my favourite thing to do with windfall apples, the early bloomers that fall from the trees early. Like crab apples, they are usually small and not great for eating, but they are a preservers best friend. I make a big glut to see me through autumn and winter.

A fresh summer treat, nectarines are one of my favourite stone fruits. This dessert has the elements of a refreshing mint julep, with the citrus fruit bringing a nice balance to the sweetness of the sugar.
