Salt Cracked Banana Bread

Like many others, I turned to food and baking for comfort this year when life changed dramatically. I realise I'm late on the banana bread craze, but I'd still like to share my version of it, as I took some time to develop my favourite iteration.

The brown sugar creates a rich caramelised loaf with a crunchy crust on top, made better with the addition of coarse salt and demerera sugar. Really over ripe and black bananas are the secret to an intense flavour. If you don’t have whole-wheat flour you can just make up the difference with plain. Sift the dry ingredients to make sure the texture is even.
